Dolphin in Lime Parsley Butter (Microwave recipe)
- ½ cup butter or margarine
- 2 tbsp. flour
- 2 tbsp fresh lime juice
- 1 tbsp. snipped fresh parsley
- ¼ tsp. black pepper
- 1/8 tsp. celery seed
- 1 lb. Dolphin fillets, cut in serving size pieces
Place margarine or butter in rectangular baking dish. Microwave on High (100%) until melted. Blend in remaining ingredients except fish fillets. Coat both sides of fish with butter sauce. Arrange in baking dish. Cover with waxed paper. Microwave at High until fish flakes easily in centre with fork.
